Coffee And Walnut Cake





Ingredients:

6oz Unsalted Butter,

6oz Caster Sugar,

3 Eggs,

6oz Self Raising Flour,

5 tsp Instant Coffee disolved in 2 tbsp Hot Water,

3oz Walnuts(chopped),

4 tbsp Apricot Conserve or Jam.

Butter Cream:

4oz Unsalted Butter,

9oz Icing Sugar sieved,

2tsp Instant Coffee disolved in 1 tbsp Hot Water

Decoration:

Walnut Halves, Coffee Beans or Coffee Flavoured Chocolates.

METHOD:

1) Heat oven to 180/350f/gas mark4

2)Cream butter and sugar

3)lightly beat eggs and slowly add to creamed mixture, beating with a wooden spoon

4)Sieve a quarter of the flour into the mixture and fold with a metal spoon

5) Fold in remaining flour, then add the coffee.

6)Fold in the chopped nuts Put on a wire rack to cool.

BUTTER CREAM:

1) Beat butter with wooden spoon until pale

2)Add sieved icing sugar and beat until fluffy. Stir in coffee

3)Spread one sponge with apricot conserve, cover with half the butter cream, then place second sponge on top

4)Top with remaining butter cream

5)Decorate with walnut halves and coffee beans, or coffee flavoured chocolates

6)Watch your waist-line expand
