first of all you will probably think I am nuts but to start this soup begins the night before
or whenever you can make corned beef n cabbage and save the stock and some pretty good slices of corned beef..
I usually make the soup the night after making it but have been known to freeze my stock and meat then just buy more cabbage.
The spices in with the corned beef is actually what gives the soup it's delicious flavor, along with all the other ingredients ...lol.
(keep in mind I make this for just hubby and I so if there are more in your family then you will have to adjust ingredients accordingly).
German Potatoe Soup
3 or 4 good size slices of corned beef cut in bite size pieces
all the stock from making the corned beef n cabbage
3 beer n bratwurst sausage cut in bite size pieces
1/2 lb bacon cut up
1 1/2 cups carrots cut up
1/4 white onion or candy apple onion, diced
5 good sized potatoes
1/4 head of cabbage, diced
1 can of evaporated milk, I use the 6 or 8 oz can
optional ingredients could be broccoli, cauliflower, bell peppers etc
in good sized stock pot; fry corned beef, sausage, bacon and onions together.
Add cabbage and let fry for 2 minutes as this helps in cabbage to cook easier.
Add the stock and let it come to boil.
Turn heat down to medium or medium low and add carrots and potatoes.
Stew slowly for an hour or until carrots and potatoes are soft.
Add milk and 1 cup water and let it simmer for a half hour.
This is a no fail awesome German Potatoe Soup.
