Milanese Souffle
Ingredients
2 Lemons
3 eggs separated
4 oz sugar
1/2 pint double cream
1/2 oz geletine
5 tablespns water
chopped nuts, whipped cream, glace cherries and angelica for decoration
METHOD
Dissolve gelatine in water, using a bowl in a saucepan of water
in another bowlin warm water and saucepan in water add egg yolks, sugar, juice, and grated rinds from lemons, whisking until thick and creamy.
remove from heat and whisk until outside of the bowl is cold
fold in lightly whipped cream then add whisked egg whites and finally the gelatine.
pour mixture into souffle case and chill.
When ready to serve stan on nice decorative plate and decorate with chopped nuts whipped cream,cherries and angelica.
